Whether it’s a finely-rolled Moravian cookie or a mouth-watering cheddar cheese straw with just the right hint of cayenne, these products are specialties that have been served in Southern homes for centuries. Products with a cultural history such as delicately roasted coffee beans, have paved the way for the new North Carolina specialty food offerings. From smokin’ salsas to candied peanuts, chocolates to pimento cheese, the flavor and diversity of North Carolina kitchens are abundant. The NC Specialty Foods Association is a dynamic organization serving more than 125 Tar Heel companies. Its mission is to actively encourage and support the promotion and appreciation of the state’s specialty food and beverages.

Message from the President
It is truly an honor to serve as the President of the NC Specialty Foods Association. The organization just concluded celebrating its 25th anniversary and is coming off an incredible two years of growth. That growth will make this edition of Dish This! the largest yet. You will be able to find the best food products and related services this state can offer. North Carolinians are proud of their food and products as evidenced by the number of award-winning food products you will find on these pages.
The association is led by a voluntary board of directors, who are all dedicated to the specialty foods industry, which helps ensure that every member meets the high standards of membership. Our dedication to growing our industry to meet the demand from consumers remains unchanged with our professional, educational, and networking events. The buying habits of consumers continues to evolve. While farmers markets and specialty stores are still important, larger grocery store chains now include their own locally made sections. The biggest evolution is that ecommerce has provided an additional outlet for the discovery of previously hard to find local, artisan, small-batch products. As an association, we want to stay on the forefront of these trends. Preheat oven 375 F. Mix together flour, soda, salt, cinnamon, nutmeg and granola in bowl. Set aside. Cream butter and sugars together in the bowl of a stand mixer. Add egg, vanilla and juice. Beat well until combined. Add granola mixture and stir by hand until well combined. Drop by teaspoon onto cookie sheet. Bake 8-10 minutes or until lightly browned. Let cool on sheet pan for a few minutes before transferring to cooling rack. * Butter will give you a thinner cookie, you can also use short - ening here and get a thicker cookie with a more predictable spread of the cookies. ** You could also use almond extract or any flavor you prefer. We started with that Southern favorite dish, chicken and dumplings, and made it super simple with Anne’s Flat Dumpling Strips. Whether you call it “chicken and dumplings,” “chicken with noodles,” or “chicken pastry” like we do, make your traditional family recipe quicker and easier with Anne’s frozen dumplings. In a large 6-quart stock pot, bring to a boil 4 quarts salted water. Add the chicken base. While the water is heating, remove frozen dumplings from freezer. Separate each layer of dumplings as needed and drop 8-10 in boil - ing broth, stirring under as added. As broth comes back to boil add more dumplings, stirring after each addition, until all are in boiling broth. Cook at full boil about 10-12 minutes or until desired tenderness is achieved. Add cooked chicken and boil 2 more minutes. Season with salt and pepper to taste. Remove from heat, cover and wait 20-30 minutes before serving. *For old-fashioned chicken and dumplings, cook a whole chicken until tender. Use the broth to cook dumplings, making sure you add enough water to have at least 4 quarts of liquid to cook a box of dumplings. To enhance the flavor, add some Anne’s Chicken Base. Remove meat from bones and add to cooked dumplings. Follow rest of recipe above.

Creamy Butternut Pumpkin Soup
Soup 3 cups of fresh chicken stock (add more as needed) 1 cup each of chopped: pumpkin, butternut squash, Yukon gold potatoes

6 tablespoons extra virgin olive oil 1/2 cup chopped shallots or leeks 1/2 teaspoon fresh ground ginger (or to taste) 1/2 teaspoon nutmeg Pinch of black pepper and salt
Add 4 tablespoons olive oil to a large pot and stir fry shallots, potatoes, pumpkin and butternut squash, salt and pepper cooking over high heat for 10 minutes (stir frequently). Add the stock; cook to soften. Add 2 tablespoons olive oil, ground ginger, nutmeg to blend. Cool slightly. Puree small portions in blender until all soup is blended. Pour back into large pot to reheat when ready to serve. Garnish: Lightly drizzle balsamic, fresh rosemary, Parmesan crisps (recipe below). Garnish Balsamic vinegar Fresh rosemary (minced) Parmesan Crisp Round: 1/2 cup Parmigiano Reggiano cheese Lemon olive oil Scoop about 1 tablespoons of fresh Parmesan cheese onto a baking sheet lined with parchment paper coated with lemon olive oil. Remove meatloaf from oven and add Berry Brothers Strawberry Chipotle BBQ Sauce to the top. Return to oven for 10-15 minutes or until meat is 160 F. Let stand 10 minutes before serving.

Spicy Peanut Noodles Serves: 6 large sides, 8 normal (see end of recipe on how to make it a main dish)
2 packets of buckwheat soba noodles or any other noodles you wish 1/2 cup of peanut butter - we love Big Spoon brand from Durham 1/2 cup of water 1/4 cup of soy sauce or tamari - you can use gluten free or low sodium 2 tablespoons rice vinegar 1-2 tablespoons brown sugar (depending on the sweetness you desire) 1 teaspoon - 1 tablespoon Cape Fear or Get Me A Switch Spicy Pepper Relish (depending
on the level of heat you desire) 1 teaspoon freshly grated ginger 1 clove of garlic (optional) Toasted sesame seeds and peanuts to garnish Cilantro or Italian parsley and lime wedges to garnish
Boil saucepan of water and add noodles - cook 3-4 minutes until al dente. Remove and drain water, cool noodles in cool/cold water, add back in pan. Add remaining ingredients (except greenery) and place in a Cuisinart or blender and blend until smooth. Pour peanut mixture into noodles and stir until well blended. Pour noodles into bowl(s) and garnish with chopped cilantro or Italian parsley and a lime wedge, sesame seeds and peanuts. Note: add some protein (chicken or tofu), shredded carrots, spring onions, bean sprouts and baby corn, peas or snap peas to make it a full meal.

For even cooking, make sure your ribs are fully thawed and brought to room temperature before cooking. Bake plain ribs in a covered pan at 350 F for approximately two hours. Remove from pan and brown slightly on a medium grill. Reduce the heat and baste with Jim’s Own Sauce. Baste at least three times per side.

Heat grill to medium-high heat. Rinse lettuce and pat dry. Cut the head in half leaving the stem end intact. You want it to hold together. Brush with olive oil and place on grill. Char quickly until it produces some color but doesn't burn. Remove and place on a decorative salad plate. Sprinkle with tomatoes and bacon. Stream on the dressing and top with Parmesan shreds. Place fried onions in a pile in the middle of the lettuce. *This can be made without grilling the lettuce if the weather doesn't permit. Lacks the grill flavor, but still really good.

2 cups chilled heavy organic cream 4 large egg yolks 3 tablespoons sugar 1 teaspoon real vanilla 7-ounces fine-quality bittersweet chocolate (not unsweetened), chopped Outer Banks SeaSalt
Heat 3/4 cup cream in a 1-quart heavy saucepan until hot. Whisk together yolks, sugar and a pinch of salt in a metal bowl until combined well. Add hot cream in a slow stream, whisking until combined. Transfer the mixture to a saucepan and cook over moderately low heat, stirring constantly, until it registers 160 F on thermometer. Poor custard through a fine-mesh sieve into a bowl and stir in vanilla. Melt chocolate in a double boiler or a metal bowl set over a pan of simmering water (or in a glass blow in a microwave at 50 percent power 3 to 5 minutes), stirring frequently. Whisk custard into chocolate until smooth, and then cool. Beat remaining 1 1/4 cups cream in a bowl with an electric mixer until it just holds stiff peaks. Whisk one fourth of cream into chocolate custard to lighten, then fold in remaining cream gently but thoroughly. Spoon mousse into eight 6-ounce stemmed glasses or ramekins and chill, covered, at least 6 hours. Let stand at room temperature about 20 minutes before serving. Finish with pinch of Outer Banks SeaSalt just before serving.

Pull the rosemary off the stem and fine chop. Set aside after chopping. In a large bowl, mix turkey, eggs and seasonings together by hand. Add about
2 pounds of ground turkey 2 tablespoons of olive oil 2 large eggs 3 sprigs of rosemary 1 cup of breadcrumbs 1 tablespoon of salt 1 tablespoon of pepper 1 teaspoon of red pepper flake 1 tablespoon cumin
3/4 of the rosemary to the mixture and slowly add your breadcrumbs until you get your mixture to a consistency of rolling into a quarter size ball. If mixture seems too sticky, add more breadcrumbs. If mixture seems too stiff, add another egg.
Heat a cast iron skillet on high heat until it is smoking. Add 2 tablespoons of olive oil to your pan and roll out your meatballs by hand quarter size. Place meatballs in the skillet and cook on all sides for about 3-4 minutes or until golden brown. Remove meatballs from heat. In a pot, pour 3/4 of the bottle of Kentucky Henry Bain and 1/4 cup of water. Whisk together and turn on high heat until bubbling. Once bubbling, add meatballs and let simmer on high heat for about 2-3 minutes. Reduce heat to medium/high, cover and finish cooking meatballs for about 15-20 minutes. Get you a fancy dish and add your meatballs to it. Drizzle remaining Kentucky Henry Bain sauce on meatballs and top with remaining rosemary. If you want to keep warm, transfer meatballs to a Crock-Pot for your party! Eat Up, Y’all!

Caviar and Cucumber Salad
1 large cucumber 1/4 teaspoon salt 2 tablespoons sour cream or crème fraiche 1 lemon 2-ounce jar of Sunburst Trout Farms® Original Caviar
Peel the cucumber and slice in half length-wise. Gently scrape out the seeds, then julienne the cucumber.
